Tasty Tuesday: Cheddar Ale Smashed Potatoes

What better way to celebrate St. Patrick's Day this week than with a special potato side dish.  Cheese and potatoes are a match made in Heaven!  This week on Tasty Tuesday we are featuring our Cheddar Ale Dip from Halladay Harvest Barn and using it to create this cheesy dish.  These potatoes are quick and easy to make and everyone will absolutely ask for seconds! 

Ingredients: 

  • 2 Pounds of Small Baby Red Potatoes
  • 6 Tablespoons of Olive Oil
  • 4 Tablespoons of Cheddar Ale Seasoning
  • 1/2 Teaspoon of Salt
  • 1/2 Teaspoon of Pepper

How to Make

  1. Preheat the oven to 400 degrees.  
  2. Brush a large baking sheet with 1 Tablespoon of Olive Oil. 
  3. Add potatoes to a large pot of water and cook until tender.  After about 15 to 20 minutes, drain the potatoes and place on the oiled baking sheet. 
  4. Using the bottom of a cup, carefully smash the potatoes until flattened, but in one piece.
  5. Combine the remaining oil and seasonings. 
  6. Brush eash potato with half the mixture and bake for 15 minutes. 
  7. Remove the potatoes and gently turn them to brush with the remaining oil.  
  8. Bake for 10 minutes or until hot and crispy.

For an extra touch of cheesiness, add cheddar cheese to the tops of the potatoes.  :)
